We have this amazing Lobster roll truck in Austin that serves Connecticut style lobster rolls in addition to a Maine Style roll. I’ve only ever tried the Connecticut. Who can say no to butter?!
Anyways, they are outrageously expensive so I decided to try my hand at making our my own version.
I Scooped out all the meat and cooked it in a skillet with butter, lemon juice and lemon zest. The lemon zest added an extra dimension of flavor that just wasn’t in the food truck dish.
I Served the lobster on Texas toast with a side of Cape Cod potato chips and ice cold Riesling. I drizzled leftover butter on the sandwiches.
